He made me a cup of tea. ‘Thank you, Earl Grey,’ I said, and kissed him on the nose. He regarded me seriously, and asked, ‘If I’m the Earl, then which tea are you?’ Now I hear Bon Iver plucking guitar strings and murmuring lyrics for a new song. ‘Little honeybush,’ he sings. ‘Honeybush, honeybush tea.’

Bon Iver left before the sun rose this morning. He had gone into town in search of a new handsaw, several paving stones, and whipping cream for his summer pudding. I know he’ll return with some fresh inspiration, as he always does - the story of a shoeless child he befriended on the road or the courtship song of the bullfrog, whose lustful tones surprise him anew each year.

“This cut appears everyday, and not just at the tables of the elites, but also at those of the common people…”
This style of carving of leg of mutton was particularly recommended for large gatherings, as it yielded the most meat from the carcass. It’s a shift from the earlier methods of carving, and an example of Kletten getting good.
